Beetroot Coconut Fry

Ingredients:

1 Big Beetroot
1 Cup Fresh Grated Coconut
Few Curry Leaves
2 Tbsp Finely Chopped Coriander
1 Tbsp Split Urad Dal
1/2 tbsp Jeera or Cumin Seeds
1/4 tbsp Mustard Seeds
1 Dry Red Chillies
1 tbsp Oil
Salt to taste

Procedure:

1. Wash, peel and cut Beetroot into small cubes and boil till tender.
2. Heat a Kadai, add one teaspoon oil. Add Urad dal, Mustard Seeds and Jeera and fry them for 2 mins. Add split dry chillies and fry till done.
3. Add boiled Beetroot to the seasoning, Salt to taste and mix well. Stir fry for 2 mins and add freshly grated Coconut and mix well. Garnish with Coriander leaves.


4. Serve with hot Phulkas or Steamed Rice with Ghee.
